I’m reporting back over a dozen years working for ourselves: It’s not easy running a small business. We have goals driven by a heightened ambition. Shoot for the stars. Become who you are. We are devoted to building a sustainable business that will have a positive impact on the environment and to stand as an example of how a small business can be successful while breaking the guiding principles of profit and expansion.  To run our business we have had to scale down the number of tables we serve daily in order to serve the highest quality dishes. Everything is scratch made, whole ingredients, and organic as much as is available and growable. We have our own gardens and focus on heirloom vegetables and dude our hands and not machines, which keeps us closest to the earth. Our goal is to create a sustainable restaurant that employs solar. The other leg of this project is to hire two full-time people and to open a second location within two years.
